Method
- Combine: chipotle chilies, adobo sauce, oil, honey, cumin, salt, and black pepper and rub mixture into brisket, covering all sides.
- Combine onion and bell pepper into a slow cooker. Pour beef stock over onion and bell peppers. Nestle brisket into mixture, cover and cook on low until brisket is very tender (8 hours).
- Remove brisket and shred with 2 forks. Return meat into slow cooker and toss with veggies before serving.
