Filling: Combine all ingredients in the bowl. It has to be a thick cohesive mixture with no large chunks of meat. Cover and let sit for 30 minutes.
Sauce: Combine all ingredients and set it at table.
Potstickers: Line baking sheet with parchment paper and dust with flour. Layer 6 wraps and brush edges with water. Scoop 2 Tbsp of filling and place slightly off center. Shape into a flat mound, and keep a knuckle’s length off the wrapper clear on all sides. Folder over wrapper, seal the edges, and shape half moon.
Place dumplings on a beaking sheet ½ inch apart. Add water and oil to the pan, place dumplings, cover with lid and let cook on low for 12 minutes.
