Gingery Chicken Potstickers

Ingredients
  

  • Filling:
  • 12 oz ground chicken
  • cup finally chopped scallions
  • 1 Tbsp minced ginger
  • 1 Tbsp sherry
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp oil
  • tsp ground black pepper
  • Sauce:
  • 3 Tbsp rice vinegar
  • 2 ½ Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp minced ginger
  • 30 potsticker wrappers

Method
 

  1. Filling: Combine all ingredients in the bowl. It has to be a thick cohesive mixture with no large chunks of meat. Cover and let sit for 30 minutes.
  2. Sauce: Combine all ingredients and set it at table.
  3. Potstickers: Line baking sheet with parchment paper and dust with flour. Layer 6 wraps and brush edges with water. Scoop 2 Tbsp of filling and place slightly off center. Shape into a flat mound, and keep a knuckle’s length off the wrapper clear on all sides. Folder over wrapper, seal the edges, and shape half moon.
  4. Place dumplings on a beaking sheet ½ inch apart. Add water and oil to the pan, place dumplings, cover with lid and let cook on low for 12 minutes.
