Ingredients
  

  • 3 Tbsp minced seeded chipotle chilies in adobo sauce
  • 1 Tbsp adobo sauce from can
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 1 ½ tsp ground cumin
  • 1 ¼ tsp salt
  • ½ tsp black pepper
  • 1 ½ lb beef brisket
  • 2 cups sliced onion
  • 2 cups sliced red bell pepper
  • â…“ cup beef stock

Method
 

  1. Combine: chipotle chilies, adobo sauce, oil, honey, cumin, salt, and black pepper and rub mixture into brisket, covering all sides.
  2. Combine onion and bell pepper into a slow cooker. Pour beef stock over onion and bell peppers. Nestle brisket into mixture, cover and cook on low until brisket is very tender (8 hours).
  3. Remove brisket and shred with 2 forks. Return meat into slow cooker and toss with veggies before serving.
