  • The Panade & Seasoning:
  • 2 slices White bread crusts removed
  • 1/3 cup Low-fat milk
  • 2 1/2 tsp Salt
  • 1 tsp Ground black pepper
  • 3 Garlic cloves minced
  • 1 1/2 TBSP Worcestershire sauce
  • 2 TBSP Ketchup
  • The Meat:
  • 3 lbs Ground beef
  • 3 Scallions finely chopped
  • Serving:
  • 10 Burger buns

Method
 

  1. Create the Panade: In a large bowl, combine the white bread and milk. Mash them together until they form a smooth paste.
  2. Add Flavorings: To the bread paste, add the salt, pepper, minced garlic, Worcestershire sauce, and ketchup. Mix well to ensure the seasonings are evenly distributed.
  3. Combine: Add the ground beef and finely chopped scallions to the bowl. Fold the meat into the mixture gently—do not overwork the beef, or the burgers will become tough.
  4. Form & Grill: Shape the mixture into 10 even patties. Grill over medium-high heat until they reach your desired level of doneness.
  5. Serve: Place on buns and add your favorite toppings.
