Ingredients
  

  • 1 lb Ground Beef
  • 1 Red bell pepper chopped
  • 3 Green onions chopped
  • 2 ½ cup Water
  • 1 package of Taco Seasoning
  • 1 can, 10 oz Diced tomatoes and green chiles undrained
  • 1 ½ cup Elbow macaroni uncooked
  • 1 cup Frozen corn
  • 1 cup Sharp cheddar cheese
  • 1 Tbsp chopped fresh cilantro

Method
 

  1. Brown meat with peppers and onions in a large nonstick skillet.
  2. Stir in water, taco seasoning, and tomatoes and bring to boil. Stir in macaroni, cover. Simmer on medium-low heat for 10 to 12 minutes, or until macaroni is tender, stirring occasionally and adding corn for the last 5 minutes.
  3. Remove from heat. Top with cheese, cover. Let stand for 2 minutes or until melted. Sprinkle with cilantro.
