Ingredients
  

  • 2 Tbsp oil divided
  • 4 skinless boneless, chicken breasts
  • ¾ tsp black pepper divided
  • ½ tsp salt divided
  • 8 oz sliced mushrooms
  • 1 tsp thyme
  • 1 Tbsp flour
  • cup chicken broth
  • cup marsala vine
  • 2 ½ TBSP butter

Method
 

  1. Heat oil in a large skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to the pan and cook until done. Remove chicken and keep warm.
  2. Add more oil, add mushrooms and thyme and cook until mushrooms are browned. Add flour, stock, vine, and bring to boil. Cook until thickens. Remove from heat.Add butter, pepper, and salt.
  3. Transfer chicken to pan, turning to coat.

Notes

Serve over polenta, mashed potato, or cooked rice.
