Chicken with Vodka Sauce

Ingredients
  

  • 2 Garlic cloves minced
  • 1 cup Heavy whipping cream
  • 8 oz Ragu sauce traditional
  • ¼ cup Parmesan cheese grated
  • ½ tsp Dry basil
  • ¼ tsp Dry parsley
  • 8 oz Penne pasta
  • 2 cups Chopped rotisserie chicken

Method
 

  1. Cook pasta according to box instructions, at dente Drain pasta and add 1 tbsp butter. Save ½ cup of pasta water.
  2. While pasta is cooking, heat a large sauce pan over high heat until hot. Add oil and minced garlic, remove from the heat and sear until fragrant. Quickly pour cream into the pot, pasta water, add Ragu, Parmesan cheese, basil and parsley and bring it back to heat.
  3. Bring to boil, remove from heat, and rest sauce long enough to let herbs flavor the sauce (5 minutes).
  4. Serve: Pasta covered with sauce and chopped chicken on top.

Lighten It Up?

If you love the flavor but want to trim the calories to around 450 per serving:
  • Swap the Cream: Use 1 cup of half-and-half instead of heavy whipping cream. You’ll save about 500 calories across the whole pot!
  • Veggie Bulk: Stir in two cups of fresh spinach at the very end. The heat of the sauce will wilt it instantly, adding nutrients and volume without extra calories.
