Beef Bourguignon Sandra Style

Ingredients
  

  • 1 lb Beef stew meat cut into 1/2-inch thick cuts
  • 3 slices Bacon cut roughly
  • 8 oz Mushrooms sliced
  • 1 large Carrot diced
  • 1/2 Onion chopped
  • 2 cloves Garlic minced
  • 2 Tomatoes chopped
  • 1 Beef knorr
  • 1 tsp Chicken base
  • Salt, black pepper, thyme, and parsley to taste
  • For the sauce: Flour and water

Method
 

  1. Crisp the Bacon: In a large pot, cut up the bacon and fry it. Once crispy, take it out and set aside, leaving the rendered fat in the pot.
  2. Sear the Beef: Add the beef to the pot and cook until browned, then remove it and set aside with the bacon.
  3. Sauté the Aromatics: Add a splash of olive oil to the pot if needed. Sauté the chopped onion and carrots until the onion is soft. Stir in the garlic and chopped tomatoes and continue cooking for a few minutes.
  4. The Slow Simmer: Return the beef and bacon to the pot. Add water, garlic, beef Knorr, chicken base, salt, pepper, thyme, and parsley. Cook until the beef is fork-tender and “falling apart”.
  5. Finish with Mushrooms: Add the mushrooms and cook for another 5 minutes.
  6. Thicken the Sauce: Mix flour with a little water and stir it into the stew. Let it simmer until the sauce thickens.
